At The Butcher at the Brig, we work hard to offer our customers a full range of homemade products. Sausages are made in the shop and we offer everything from the traditional beef and pork to our very popular sweet chilli and irn-bru sausages. We also offer burgers, white puddings, haggis, meat roll and potted meat, all of which are receiving rave reviews from our customers.

Meat Cuts for Clever Cooks

At The Butcher at the Brig we are often asked what should be done with a certain cut of meat - we are delighted to advise. As shopping online increases in popularity, many people prefer the comfort and security of being able to find information online, so we have listed some popular and not so popular cuts of meat and how they should be cooked. Hope this helps.


Silverside – best for roasting
Sirloin Steak – grill or griddle with mushrooms and onions
Topside – also a roasting cut but can be pot-roasted if preferred
Plate – this inexpensive cut of meat is an alternative to topside and is delicious as a pot roast or use it to make stock for soup
Skirt – this is delicious stuffed with oatmeal and then a long slow stewing on the hob
Back Vein – seldom asked for, it is inexpensive and lovely braised on the hob
Thick Rib – suitable for tattie soup
Rib – suitable for lentil soup
Brisket – suitable for soup or pot roasting


Lamb Shank – suitable for making tasty broth
Gigot of Lamb – roast or casserole – can be bought in the piece or as chops


Pork Shoulder – roasting - long slow cooking in the oven
Spare Ribs – BBQ or in the oven, we have a selection of marinade sauces in which you could use to cook the spare ribs
Pork Loin Chops – grilling or frying
